To create this San Francisco Style wonder, we combine an old-world family spice formula with the highest quality pork shoulder. Garlic and black pepper take center stage here as we pay homage to our Italian ancestors and the salami capitol of the United States: San Francisco!

Ingredients: pork, sea salt, wine, contains less than 2% of the following: cane sugar, spices, natural flavoring, garlic, lactic and starter culture. Minimally processed - no artificial ingredients.

    Great for snacking, salami pairs well with cheese, olives, 
crackers, bread, wine and beer. Also, great for spicing up eggs, pasta, 
salads and sauces.

    Our salami is coated in an organic white mold as part of the dry-curing process. As you would find in some fine cheeses, this mold is harmless and contributes to the unique flavor profile of our salami.

    These salamis are shelf stable and do not need to be refrigerated 
until after opening. Perfect for camping, hiking, picnics, or traveling.

SALAMI SCHOOL

UNCURED NITRATE-FREE

Our salami is made the old-school way, using sea salt and celery juice powder. We never use chemical nitrates or nitrates.

SALAMI & MOLD

Our traditional Italian-style dry salami is covered in an organic white mold during the preservative dry-curing process. This mold, similar to the type found in fine cheeses, is harmless and adds to the unique flavor of our salami.

Because our salami is vacuum-sealed in plastic, the growth of mold is prevented, so you might not see any mold on the surface when you first open your salami.

Once exposed to air, you may notice the development of white mold (which can also be green or dark in color, and that's okay). Don't worry! This mold is beneficial and helps protect the salami from harmful bacteria. It's completely safe to eat, but it's typically removed when you take off the outer casing before enjoying your salami.

SALAMI CASING

We use a fibrous casing, which is made from plant cellulose and should be removed before eating.
