SALAMI & MOLD

Our traditional Italian-style dry salami is covered in an organic white mold during the preservative dry-curing process. This mold, similar to the type found in fine cheeses, is harmless and adds to the unique flavor of our salami.

Because our salami is vacuum-sealed in plastic, the growth of mold is prevented, so you might not see any mold on the surface when you first open your salami.

Once exposed to air, you may notice the development of white mold (which can also be green or dark in color, and that's okay). Don't worry! This mold is beneficial and helps protect the salami from harmful bacteria. It's completely safe to eat, but it's typically removed when you take off the outer casing before enjoying your salami.
